You might not think that finding a GAPS legal pot roast is difficult–but it is! Just search the net, and you’ll find plenty of pot roast recipes that use cream of mushroom soup and dry onion soup mix (neither of which are GAPS friendly). If you’ve ben searching for a totally real, easy, yummy slow cooker pot roast, try this one!
INGREDIENTS:
1 TB butter or ghee
2 lbs beef roast
1 onion, chopped
8 cloves garlic, minced
4 slices bacon, chopped
1/2 c red wine
1/2 tsp dried ground rosemary
1/2 tsp dried thyme
1/2 tsp dried marjoram
sea salt and black pepper
METHOD:
Heat butter in a large skillet, add beef roast and brown on all sides. Place roast in a crock pot. Sauté onions, garlic and bacon in skillet for 5 minutes, add to crock pot. Add red wine and seasonings to crock pot. Cover and cook on low for 8 hours.
