My family loves this chicken recipe! The best part about it? The BROTH that you can make after you’ve taken the meat off of the bones. Mmmmm! It is SO good to drink! It’s like cinnamon toast in a cup! 🙂
This is yummy paired with a sweet side dish, like sweet potatoes or butternut squash, or a spinach salad with a honey vinaigrette. I have made this chicken in the crockpot before–same seasonings, on low for most of the day.
Super Easy Cinnamon Chicken
Ingredients:
1 whole chicken (about 4 lbs)
1/4 tsp ground cloves
1/4 tsp ground allspice
1/2 tsp ground nutmeg
2 tsp ground cinnamon
Directions:
Preheat oven to 500 degrees. Wash chicken and pat dry, set aside in a roasting pan. In a small bowl, combine all of the spices. Rub spices all over the chicken. Set the chicken breast-side down in the roasting pan. Roast for 15 minutes, reduce the temperature to 450 degrees. Roast for 15 more minutes and then baste the chicken with the drippings in the pan. Reduce heat to 425 degrees and roast for 30 more minutes, or until the chicken reaches 180 degrees with a meat thermometer.

This sounds so yummy! I have some in the crock-pot right now for breakfast tomorrow. My taste buds have worn ruts in my tongue with their impatient pacing because morning can’t get here soon enough. I’m already planning a winter meal around it. I’m thinking side dishes of sage dressing made with almond or coconut flour bread, roasted veggies (butternut squash, onions, and Brussels sprouts) studded with bacon, mashed cauliflower with roasted garlic, lacto-fermented cranberry-orange relish, some kind of soup, and apple or pear slices thrown in the crock-pot with the chicken and topped with a buttery almond flour crumb mixture for dessert. Yum!
I left this recipe cooking in my crockpot earlier and can’t wait to get home and gobble it up after work! When you make bone broth with the remaining carcass, do you add anything besides water? Cinnamon toast in a cup sounds like it might be even more delicious than the main dish itself. 😉
I bet you could also use this seasoning mixture in the boiled chicken from making broth. Once the chicken has been pulled off the bones, mix up the chicken with the seasoning and either cook in the oven until warmed or use a large pan on the stove top.
