Sunday Morning Breakfast Casserole

I came up with a recipe for a hearty breakfast casserole that I make every Sunday morning before church. If I’m on top of things, I’ll do some prep work ahead of time:

  • At the very least, I’ll start defrosting 1 lb of sausage on Friday evening.
  • If I’m really good, I’ll cook the sausage & onion before Sunday morning. My big goal? To cook a bunch of ground sausage and freeze it in 1 lb portions, ready for this casserole.
  • It’s nice to have the cheese cubed and ready to toss in. It would be even nicer to have cubed cheese frozen for a couple of month’s worth of breakfast casseroles. πŸ™‚

Sunday Morning Breakfast Casserole

 

1 lb ground sausage

1/4 onion, chopped

1/4 cup butter

2 cups cheddar cheese, cubed

1 cup other cheese, cubed (I like Jack or Swiss)

5 oz chopped spinach (I use frozen)

8 oz ham (no sugar), chopped, optional (sometimes we don’t add this in)

16 eggs

salt

pepper

garlic powder

 

Cook the sausage and onion in half of the butter. Grease a 9×13 pan with the rest of the butter.

Whisk together the eggs and the spices in a medium bowl.

Put all ingredients into the prepared pan and top with the eggs.

Bake at 350 degrees for 40 to 50 minutes. This is a hearty meal for Sunday mornings, and easy! Pre-cook the sausage and onions & freeze, pre-cube the cheese and ham & freeze, and you’re set!

 

We usually have this with orange juice as a special Sunday morning treat! Our family leaves for church by 9:15 or 9:30 (or 9:45 if we’re running late!!), so I have to start prepping this by 7 am so that we have enough time to eat before we leave. It is best to have the sausage cooked ahead of time (it makes for a less stressful Sunday morning, and I don’t feel like I smell like sausage at church ;)), but even if the sausage is uncooked Sunday morning, it can be done!

    • Krysti, I wonder if you could make this as a big casserole and then cut it into serving sizes and freeze it, so it’s ready to warm up (so that when you go to the effort of frying up the sausage, etc., you only do it once, rather than multiple times for smaller amounts.) πŸ™‚

      • I have frozen other breakfast casseroles and they do great. I make mine in a 9 x13 then cut it into 4 pieces. The pieces fit perfectly into a quart size ziplock freezer bag.

I was just looking through your recipes, looking for something GAPS friendly that I could actually enjoy – been feeling a little sorry for myself as DH eats ice cream, etc. So I notice you have dessert recipes with cocoa. I would definitely not be feeling sorry for myself if I could eat chocolate, but cocoa is on the list of foods to avoid. I haven’t been eating ANYTHING on the foods-to-avoid list, so I’m just wondering if the cocoa affects you negatively at all. Do you eat other non-GAPS foods too? How do you decide which non-GAPS foods to include in your diet. (You may have guessed that I’m just looking for someone to tell me I can have some chocolate back in my life! πŸ˜‰ ) Actually, would you mind emailing me privately.     • Hey Sarah, I will e-mail you privately too, I just wanted to share (in case others are wondering), Dr. Campbell-McBride addresses pure cocoa here: http://www.gapsdiet.com/FAQs.html (just do a search for cocoa). We went 8 or 9 months on GAPS without cocoa, and then I read the FAQ’s and I was SO EXCITED!!!! πŸ™‚ πŸ™‚ πŸ™‚ I do notice that my body does not like “too much” cocoa, but I can enjoy a little bit. πŸ™‚

  2. I’ve been into breakfast casseroles lately. I like that this one uses spinach. I would have to omit the cheese, but I have been surprised to learn that casseroles can be good without it! Thanks for linking to Gluten-Free Wednesdays.

  3. your sausage and ham… do you get them from a local farmer? what’s your source? i’m having a really hard time finding anyone who makes sausage w.out illegals – like brown sugar.
