GAPS Legal Stuffed Bell Peppers

I first have to apologize that I’m not doing a very good job at capturing photos of our food! Our evenings have been busy and it always seems like we’re getting dinner started later than we hoped, and we’re all *STARVING*…You know what I mean. Anyways, I think about taking a picture about 1/2 way through my dinner–and it’s never quite as pretty when it’s half eaten!

Anyways, this is what we ate tonight!

~~STUFFED BELL PEPPERS~~
2 lbs ground beef
1 small onion (or 1/2 of a large one)
2 elephant garlic cloves (or 4 regular size?)
2 carrots, minced in a food processor
1 can Tomato Sauce
6 Red Bell Peppers (or orange, yellow, or purple. Just no green! They’re under-ripe and not good for you!)

This is easy cheesy! Cook the ground beef with the onion and the garlic (all chopped up, of course!). When the beef is totally done (no more pink), add in the carrots and the tomato sauce.
Cut the tops off of the peppers and scrape the seeds out. Put the peppers into a baking dish that’s small enough that they’ll all stand up. Stuff the peppers with the beef mixture.
Pour some water in the pan so that it’s about 1″ high.
Put foil over the bell peppers.
Bake the peppers for 1 hour at 350 degrees.

YUM!!! SO GOOD! Try them! =)
