I made these goodies on the day that many people in my family began throwing up! There were not many of us who could test these, but that just meant more for us; right? 😉 They’re not exactly like traditional Snickerdoodles, but they hit the craving, for me. Try them and tell me what you think!
Coconut Flour Snickerdoodles
INGREDIENTS:
4 eggs
3/4 c honey
1 tsp vanilla extract
1/4 tsp sea salt
1/2 c butter, softened
3/4 c coconut flour (where to buy coconut flour)
2 tsp cinnamon
METHOD:
Preheat oven to 375 degrees. Line a baking sheet with parchment paper and set aside. In the bowl of an electric mixer, combine eggs, honey, vanilla, salt and butter and mix well. Sprinkle in the coconut flour and mix until combined. Let the batter rest for about 5 minutes to thicken. Scoop tablespoons of this batter onto the prepared baking sheet. Sprinkle cinnamon over each blob of batter. Bake for 10-15 minutes.

I made these today but, used real maple syrup instead of honey and SOOOO good! I will for sure be making these again!
I also think I am going to mess around and try different add-ins like white chocolate and macadamia nuts!

These are wonderful cookies. They are light and fluffy and delicious. I made them for my son and I tonight and he loves them too! We are new to becoming vegetarians. So this recipe is especially nice to have. Thank you very much. :0))

This is one of the best coconut flour cookie recipes that I’ve ever tasted! It tastes just like a snickerdoodle, but I’ve tried making it into cookie bars too, and even leaving the cinnamon out and adding chocolate chips. It’s basically a great base for any sort of cookie!

Used Grape seed oil instead of butter and corriander in stead of cinnamon.
